A guy named Bob Gibson invented Alabama White BBQ Sauce over 100 years ago and it still remains a popular sauce in the South and now in my neck of the woods! Super tasty on chicken and my party wings! Make it spicy by using hot horseradish, spicy mustard, and extra cayenne if you want more of a kick!
SLIGHTLY HEALTHIER SCALLOPED POTATOES
I tried to make my scalloped potatoes a bit lighter this time by using almond milk and less butter; it’s just as good, trust me! Be sure to get the potatoes really golden brown on top so you get that crispy texture and flavor! Super tasty!
SUPREME TATER TOTS (CROQUETTES)
Traveling in Portugal I discovered these delicious fried fish and potato bites - think tater tot but better! Cod Croquettes are a local specialty but can easily be made at home in the U.S. or anywhere! You can easily substitute the salt cod with fresh fish, crab, shrimp or even lobster! I hope you’ll give these a try!
PIRI PIRI CHICKEN

Piri Piri Chicken is a popular, Portuguese dish of butterflied, barbecued chicken. What distinguishes Piri Piri Chicken from other grilled chickens is the unique glaze it receives before going on the grill. 

Piri piri is the common name for it in Portugal. However, internationally it is much more commonly known as peri peri chicken. Piri piri is believed to have derived from the Swahili Pilipili which means pepper.

CHICKEN TERIYAKI “DONBURI” (BOWL)
When we were in Japan for our son's birthday, we enjoyed a lot of different types of Japanese rice bowls or "donburi" featuring fish, chicken or meat over steamed rice. This chicken teriyaki version is super easy to make in 30 minutes and has incredible flavor! You and your family will love it. Try throwing in some of your favorite veggies or using beef instead!
CHIMICHURRI CHARRED OCTOPUS
I was able to learn first hand from dad Jorge how simple cooking octopus can be. The finished BBQ charred dish is so tasty with that bit of char crunch on the octopus and chimichurri flavor!! It’s so worth trying out. Kids love it and tons of protein as well. Try something new! 
BBQ FISH TACOS WITH PINEAPPLE SALSA AND TANGY AIOLI
Simple BBQ Fish Tacos with Pineapple Salsa and Homemade Aioli!! Made the pineapple sweet onion tomato salsa with a little fresh Thai basil. Plus I did a little tangy aioli with a kick. Dang, that’s crazy good!!! I used fresh mahi from @southmauifishcompany but you can use any fresh or fresh-frozen white fish.
GREEN APPLE PANCAKES
Celebrate St. Paddy’s day with these festive Green Apple Pancakes! My favorite, fail-proof pancake recipe topped with an amazing apple compote. Also includes instructions on how to make your very own green food coloring!
TAMARIND SHRIMP

Tamarind might be one of the most important ingredients in Thai cooking; It’s widely available, super versatile, and adds a distinct sweet and sour component to dishes. These Shrimp with Tamarind Sauce are so simple to throw together and the flavor is out of this world! 

SWEET RICE DUMPLINGS (DANGO)
We ate these sweet and sticky rice dumplings in Tokyo as a street food snack and wanted to recreate it at home! In Japan it’s served with a sweet soy glaze, which is fantastic, but these would be great with chocolate or caramel sauce too! Think of it as a new twist on S’mores!! 
SALT CRUSTED SEA BASS

We had the pleasure of enjoying this Salt Crusted Sea Bass while in Singapore;  made by Italian chef, Simone Loisi, a hard working dad who is married to a local Singaporean. Born in Italy, he was also trained in France so he can beautifully create many Italian and French dishes. He is sharing his recipes since he loves to teach others how to make his homeland cuisine.

 

BLACK TRUFFLE RISOTTO

We were blown away by this Black Truffle Risotto while dining in Singapore and couldn't wait to recreate it at home! Hard working dad chef, Simone Loisi, was kind enough to share his recipe with us. Born in Italy, trained in France, and married to a local Singaporean, he loves teaching others how to make his homeland cuisine.
