PINEAPPLE CHICKEN BOWLS

These Pineapple Chicken Bowls are bursting with flavor and so easy to throw together! Peppers, onions, pineapple, and chicken thighs get sautéed together in a sweet and tangy sauce that’ll have you licking the bowl! 

 

INGREDIENTS
2 tbsp sesame oil 
1 lb boneless, skinless chicken thighs, cut into 1” pieces 
1 tsp minced garlic
1 tsp minced ginger 
Chinese five spice
Salt and pepper, to taste 
1 red bell pepper, seeds removed and cut into 1” pieces 
1 cup diced sweet Maui onion 
1 cup pineapple chunks, fresh or canned 
¾ cup vegetable broth 
¼ cup low sodium soy sauce 
2 tbsp honey 
2 tbsp white miso paste 
¼ tsp chili garlic sauce 
2 tsp sesame seeds 
Cooked white rice, for serving

DIRECTIONS:

  1. Heat the sesame oil in a large pot over medium-high heat. 
  2. Add the ginger and garlic and season to taste with Chinese five spice, salt, and pepper. 
  3. Add the red bell pepper, Maui onion, and pineapple chunks. Cook until the vegetables have softened and chicken begins to brown.
  4. In a small bowl, whisk together the vegetable broth, soy sauce, honey, white miso paste, and chili garlic sauce until smooth. 
  5. Stir the mixture into the pot and cook over medium-low until it begins to thicken, about 10-15 minutes. 
  6. Serve over white rice, garnish with sesame seeds, and enjoy!
