PINEAPPLE CHICKEN BOWLS

These Pineapple Chicken Bowls are bursting with flavor and so easy to throw together! Peppers, onions, pineapple, and chicken thighs get sautéed together in a sweet and tangy sauce that’ll have you licking the bowl!
INGREDIENTS
2 tbsp sesame oil
1 lb boneless, skinless chicken thighs, cut into 1” pieces
1 tsp minced garlic
1 tsp minced ginger
Chinese five spice
Salt and pepper, to taste
1 red bell pepper, seeds removed and cut into 1” pieces
1 cup diced sweet Maui onion
1 cup pineapple chunks, fresh or canned
¾ cup vegetable broth
¼ cup low sodium soy sauce
2 tbsp honey
2 tbsp white miso paste
¼ tsp chili garlic sauce
2 tsp sesame seeds
Cooked white rice, for serving

DIRECTIONS:
- Heat the sesame oil in a large pot over medium-high heat.
- Add the ginger and garlic and season to taste with Chinese five spice, salt, and pepper.
- Add the red bell pepper, Maui onion, and pineapple chunks. Cook until the vegetables have softened and chicken begins to brown.
- In a small bowl, whisk together the vegetable broth, soy sauce, honey, white miso paste, and chili garlic sauce until smooth.
- Stir the mixture into the pot and cook over medium-low until it begins to thicken, about 10-15 minutes.
- Serve over white rice, garnish with sesame seeds, and enjoy!
