One of the best sandwiches I’ve ever made - the Ultimate Tuna Melt! This sandwich has it all: Creamy tuna with a bit of sweetness and crunch from the apple, plenty of melted cheese, all topped with a delicious combination of avocado, mango, and pepperoncini. I used smoked tuna, but you could definitely try it with baked, grilled, or even canned tuna.

ULTIMATE TUNA MELT

Ingredients

  • 3 cups cooked, flaked tuna (fresh grilled/smoked tuna is great but canned works as well!)

  • ½ cup mayonnaise 

  • ¼ cup yellow mustard

  • 2-3 tbsp capers 

  • Sea salt and freshly ground pepper, to taste

  • Chili powder, to taste 

  • ½ apple, peeled, cored, diced

  • Sliced cheddar and provolone cheese

  • Butter

  • 1 avocado, peeled and sliced

  • 1 mango, peeled and sliced

  • Sliced pepperoncini

  • Sliced sourdough or bread of your choice

Directions

  1. Combine the tuna, mayonnaise, yellow mustard, capers, salt, pepper, and chili powder in a large bowl and mix until well combined.
  2. Stir in the chopped apple.
  3. Spread the mixture onto your sliced bread and top with two slices each of cheddar and provolone.
  4. Place in a preheated cast iron skillet with a bit of butter to melt the cheeses.
  5. Remove from the skillet once the cheese has melted and the tuna has heated through.
  6. Top with sliced avocado, mango, and pepperoncini. Season to taste with a dash of chili powder.
  7. Add a slice of toasted sourdough on top and dig in!
