SPAMakopita
A twist on the classic spanakopita…SPAM instead of spinach! We made three different versions: Traditional, Hawaiian, and Spicy Pizza. They all turned out SO GOOD. I urge you to experiment with different fillings and varieties of SPAM to come up with your own signature SPAMakopita. The possibilities are endless!

Rhubarb is a red or green vegetable that looks a bit like celery and has a tangy flavor. It’s usually in season between April and June. When cooked, it becomes tender quickly. I love mixing it with apples and cherries for the perfect filling.

Wow your Valentine with these Ice Cream Sandwiches with Rhubarb Filling and Chocolate Dipping Sauce. They look fancy but are actually very simple thanks to the frozen puff pastry!
