GLUTEN FREE STRAWBERRY COBBLER

Sweet strawberries with a crisp topping, not only is this Strawberry Cobbler gluten free, it's also vegan and free of refined sugar!
INGREDIENTS:
Topping
1 cup + 1 tbsp gluten-free flour (such as Cup4Cup)
¼ tsp salt
¼ tsp baking soda
⅓ cup coconut oil, melted
¼ cup maple syrup
1 tsp vanilla extract
Strawberry Mixture
4 cups fresh strawberries, stems removed and halved
2 tbsp gluten-free flour
¼ cup maple syrup
1 pinch salt

10” cast iron skillet
DIRECTIONS:
- Preheat oven to 350°F.
- Combine all ingredients for the topping in a large bowl and mix until well combined. The dough will be thick and somewhat greasy (this is normal).
- Combine the ingredients for the strawberry mixture in a large bowl and toss until the flour has dissolved.
- Transfer the strawberry mixture to a 10" cast iron skillet or baking dish (8x8" or 9x9" works well).
- Drop spoonfuls of the cobbler mixture over the strawberries and bake for 30-40 minutes, until the topping is golden brown and the strawberries are bubbling.
- Serve warm with vanilla ice cream or whipped cream, optional but highly recommended!
