SPAMakopita
A twist on the classic spanakopita…SPAM instead of spinach! We made three different versions: Traditional, Hawaiian, and Spicy Pizza. They all turned out SO GOOD. I urge you to experiment with different fillings and varieties of SPAM to come up with your own signature SPAMakopita. The possibilities are endless!
TRADITIONAL SPANAKOPITA
Spinach Pie or Spanakopita is a traditional Greek dish made with a savory, spinach and feta filling inside of crispy, golden layers of phyllo dough. Serve alongside a big Greek salad for a delicious dinner! 
ROCK SHRIMP TEMPURA
Rock Shrimp Tempura with Thai Butter Aioli Sauce is the perfect starter for an at-home sushi night. The potato starch ensures a super crunchy exterior and the sauce is the perfect mix of sweet and spicy. 
SEARED CARPACCIO
This stunning Seared Carpaccio is a wonderful way to serve your fresh catch! Thinly sliced fish infused with ginger, lemon, and soy and seared, right before serving, with hot sesame oil. This dish is sure to impress! 
BAKED KOREAN CHICKEN WINGS
Fellow dad Hop Le saw a recipe for Korean Chicken Wings in the Wall Street Journal a few years back and recreated the recipe for our Asian night themed dinner party. This was sooo tasty. He used the Air Fryer to cook them and these yummy wings came out perfect! You could also bake - no need to fry in oil!
GUAJILLO CHILE CRUSTED LAMB LOLLIPOPS
These deliciously spiced Guajillo Chile Crusted Lamb Lollipops have just the right amount of heat and are super simple to throw together. Makes a great appetizer or main dish - perfect for feeding a crowd! 
MEATBALLS - SLOPPY JOE STYLE
Made from scratch meatballs simmered in an authentic sloppy joe sauce and topped with mozzarella cheese. These  Sloppy Joe Style Meatballs are great on a sub roll or over a bed of rice!
SUPREME TATER TOTS (CROQUETTES)
Traveling in Portugal I discovered these delicious fried fish and potato bites - think tater tot but better! Cod Croquettes are a local specialty but can easily be made at home in the U.S. or anywhere! You can easily substitute the salt cod with fresh fish, crab, shrimp or even lobster! I hope you’ll give these a try!
CHEDDAR CHEESE SOUFFLÉ
An amazing, savory soufflé that makes an impressive dinner party starter or an elegant light lunch. If you’ve always been intimidated by soufflés, this recipe is for you! It does take a bit of time to prepare, but the results are well worth it. Once you have the basic steps down, you can use whatever type of firm cheese you’d like. Just be sure to grate it yourself for the best results. 
HOMEMADE HUMMUS
Buying store bought hummus is easy but so is making your own spread! Buy the best quality olive oil you can find and if you really want to make it fancy, try adding braised short rib to it! 
PRAWN CAKES (TOD MAN KOONG)
Tod man koong are delightful little prawn cakes flavored with coriander and fried until golden brown. Make a big batch of these and serve them up with pineapple sauce or sweet chili sauce!

My buddy, Steve Tyler, recently went on his very first big fishing trip out of San Diego and brought home 100 lbs of bluefin tuna! He was very generous and shared his amazing bounty with me; I seared some and made this delicious poke with the rest!
