Chef Joe makes everything from scratch! Even Charcoal and he forges his own knife too! Here he make his From Scratch Tacos… grinding the meat to making the tortillas! Nothing beats fresh homemade food!
Q1 - What’s one tool in the kitchen you wish you had and why?
I wish I had an outdoor pizza oven. Why? Because it’s friggin awesome!
Q2 - What’s your biggest meal disaster?
It wasn’t in the kitchen but we did an event on site for 250 people and there were supposed to be outdoor grills and we got there with an hour before the event and discovered that there were no grills , they had been removed. So that was a disaster except it ended up being a huge win because we dug a pit and used our baking steels and totally improvised, cooked for everybody and won the day!
Q3 - What’s one thing you would like to learn how to make?
One thing I would like to learn to make is nuclear energy...LOL!
Q4 - If there was one dish you would teach your kid to make, what would it be?
I teach my kids a lot and they can make more than most adults. I really just want to teach them to be confident and enjoy the kitchen. It’s a place of joy.
Q5 - What does it mean to you as a dad to cook for your family?
Cooking with my family is the most enjoyable thing I do. My whole life and career is built around it and I would never change it.
