Potato Crusted Mahi Mahi with Chef Allen Rimorin

I am the owner of Aloha Prime Eatery along with my wife, Shelby. We’re a Husband and Wife duo who are passionate about the food we put out (and the Los Angeles Dodgers!). I was born and raised on Maui and have over 20 years experience in the restaurant industry. I've worked at many restaurants all over Maui such as Nick's Fish Market, Hula Grill, Roy’s, and Sarentos on the Beach, just to name a few.
Shelby Moved to Maui 12 years ago from Southern California to go to school for Massage Therapy. She worked at the Westin for 6 years until the pandemic hit.
We have two boys - Mason and Lucas - who are our everything.
In February of 2023 we made a choice to pursue our dreams of working for ourselves while being able to feed Maui and all its visitors the dishes we LOVE.

All of our dishes are ones we enjoy making at home. They all have a memory and a back story of our journey together. We look forward to feeding you all soon on Maui!

Q1 - What’s one tool in the kitchen you wish you had?
A meat grinder, so we could make meat loaf and sausages.

Q2 - What’s your biggest meal disaster?
I was cutting Fresno chili’s without wearing gloves. I had to take a break to use the restroom and that was a big mistake. Everything I touched was burning and I had to finish my shift. I was in so much pain.

Q3 - What’s one thing you would like to learn how to make? 
I wanna learn how to bake. Bread and pastries specifically.

Q4 - If there was one dish you would teach your kid to make, what would it be? Pork or chicken adobo. A Filipino dish that is a staple in our culture.

Q5 - What does it mean to you as a dad to cook for your family?

I love it. I love it when my kids want to help, they’re having fun, I’m having fun….the kitchen is the best gathering place. Everyone’s happy and belly’s are full!
