WATERMELON, FETA & BASIL SALAD

2 ½ lbs watermelon, chilled
¼ lb feta cheese, chilled
2 tbsp pine nuts, toasted
6 leaves Greek basil (or 3 regular basil leaves) torn into pieces
¼ cup extra virgin olive oil

Knife

  1. Remove the rind from the watermelon and cut into 1" cubes or 1" thick triangular wedges. (No need to remove the seeds.)
  2. Arrange the melon on a serving platter and crumble the feta over it.
  3. Sprinkle with the toasted pine nuts and scatter the torn basil over the top.
  4. Drizzle with the olive oil and serve immediately.
