2 ½ lbs watermelon, chilled
¼ lb feta cheese, chilled
2 tbsp pine nuts, toasted
6 leaves Greek basil (or 3 regular basil leaves) torn into pieces
¼ cup extra virgin olive oil
- Remove the rind from the watermelon and cut into 1" cubes or 1" thick triangular wedges. (No need to remove the seeds.)
- Arrange the melon on a serving platter and crumble the feta over it.
- Sprinkle with the toasted pine nuts and scatter the torn basil over the top.
- Drizzle with the olive oil and serve immediately.
