A super simple and refreshing summer salad. Ripe, juicy watermelon and salty, creamy feta cheese are a match made in heaven!
- Remove the rind from the watermelon and cut into 1" cubes or 1" thick triangular wedges. (No need to remove the seeds.)
- Arrange the melon on a serving platter and crumble the feta over it.
- Sprinkle with the toasted pine nuts and scatter the torn basil over the top.
- Drizzle with the olive oil and serve immediately.
