1 ripe pineapple, Heavy for its size, yellow on the bottom, and smells sweet

Directions
Prepare the Pineapple: Cut off the top green crown and the bottom base so the pineapple stands flat. Slice the skin off from top to bottom, following the curve of the fruit. Use your knife or a small peeler to carve out any remaining prickly brown "eyes." Slice the pineapple crosswise into even disks, aiming for 1/4-inch thickness. Leave the core intact—it becomes a deliciously chewy center.
Set Up the Dehydrating Station: Fit the wire cooling rack directly inside your cookie sheet. Arrange the pineapple slices across the rack in a single layer. Leave a small gap between each slice so the air can circulate freely.
The Low and Slow Oven Bake: Preheat your oven to 140°F (60°C). Prop the oven door open slightly—about 1 to 2 inches—using a wooden spoon or a folded oven mitt. This is crucial because it allows the evaporating moisture to escape the oven. Slide the tray inside.
Monitor and Dry: Let them dry for 8 to 14 hours (10 hours is often the sweet spot). Optional: Check them around hour 3 or 4. Gently nudge them with a spatula if they are sticking to the wire rack. Because you are using a rack, you don't strictly need to flip them, but doing it once halfway through helps.
Test for Doneness: Pull a slice out and let it cool completely for 5 minutes. Bend it in half. It should feel leathery, pliable, and chewy like a gummy candy. If it feels sticky, damp, or if any moisture beads up when bent, put the tray back in the oven for another hour.
Condition and Store: Cool: Let all the slices cool completely on the rack. Condition: Place the slices in a clear, airtight jar for 1 week. Shake it daily. If you see any condensation build up on the glass, it means there is hidden moisture; put them back in the oven for a bit. Store: Keep them in a sealed container in a cool, dark pantry. They will stay fresh and delicious for 6 to 12 months!
