SUMMER BEET, PEACH, AND GOAT CHEESE SALAD

2 medium beets
1 fresh peach
2 oz goat cheese, crumbled
3 tbsp thinly sliced fresh basil
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
Salt and pepper, to taste

Small bowl 
  1. Boil the beets for about 15-20 minutes, until tender. Drain and allow to cool. You should be able to easily peel them with your hands once cooled.
  2. Slice the beets and peach and arrange on a serving platter.
  3. In a small bowl, whisk together the olive oil and lemon juice. Season to taste with salt and pepper.
  4. Drizzle the dressing over the beets and peaches. Top with fresh basil and goat cheese.
