1 fresh peach
2 oz goat cheese, crumbled
3 tbsp thinly sliced fresh basil
2 tbsp extra virgin olive oil
1 tbsp fresh lemon juice
Salt and pepper, to taste
- Boil the beets for about 15-20 minutes, until tender. Drain and allow to cool. You should be able to easily peel them with your hands once cooled.
- Slice the beets and peach and arrange on a serving platter.
- In a small bowl, whisk together the olive oil and lemon juice. Season to taste with salt and pepper.
- Drizzle the dressing over the beets and peaches. Top with fresh basil and goat cheese.
