My wifey's famous homemade potato salad with bacon! A great reason to use some fresh herbs from your garden. This is the only potato salad recipe you'll ever need, trust me!
3 lbs Yukon Gold or red potatoes, cut into 1" pieces
¼ cup diced, roasted sweet onion (roasted ours in the air fryer)
1 cup mayonnaise
¼ cup Dijon mustard
⅛ cup chopped fresh chives
¼ cup chopped fresh parsley
6 slices bacon, cooked until crisp and chopped
4 hard boiled eggs, peeled and sliced
½ tsp ground black pepper
½ tsp kosher salt
- Start by boiling the potatoes for 8-15 minutes, until fork tender.
- Drain and allow to come to room temperature. (You can throw them in the fridge to speed the process up also.)
- Mix the mayonnaise, Dijon mustard, chives, parsley, hard boiled egg, roasted onion, and most of the bacon (reserve a bit for garnishing) together in a large bowl. Season with salt and pepper.
- Stir in the potatoes, adjust seasoning, if needed. Garnish with the reserved bacon and serve or refrigerate until ready to serve. Enjoy!
