POTATO SALAD WITH BACON

YIELDS: 6 Servings PREP TIME: 10 mins COOK TIME: 15 mins TOTAL TIME: 25 mins
3 lbs Yukon Gold or red potatoes, cut into 1" pieces
¼ cup diced, roasted sweet onion (roasted ours in the air fryer)
1 cup mayonnaise
¼ cup Dijon mustard
⅛ cup chopped fresh chives
¼ cup chopped fresh parsley
6 slices bacon, cooked until crisp and chopped
4 hard boiled eggs, peeled and sliced
½ tsp ground black pepper
½ tsp kosher salt

  1. Start by boiling the potatoes for 8-15 minutes, until fork tender.
  2. Drain and allow to come to room temperature. (You can throw them in the fridge to speed the process up also.)
  3. Mix the mayonnaise, Dijon mustard, chives, parsley, hard boiled egg, roasted onion, and most of the bacon (reserve a bit for garnishing) together in a large bowl. Season with salt and pepper.
  4. Stir in the potatoes, adjust seasoning, if needed. Garnish with the reserved bacon and serve or refrigerate until ready to serve. Enjoy!
