Pineapple Chicken with Andouille Sausage is super simple to make but tastes amazing! The combination of all these ingredients makes you wanting more!
1 lb chicken breast or thighs
1 fresh pineapple, cut in small cubes (or canned)
1 yellow, green & red bell pepper - chopped
1 red onion, chopped
4 tbsp fresh grated ginger
1 tbsp saffron
1 lb andouille sausage (about 5 sausages)
- Heat a bit of peanut oil in a large skillet, then add the ginger and saffron. Stir and wait a few minutes to marry the oil, ginger and saffron.
- Add chicken, pineapple, and sausage, stir to mix.
- Cover, turn heat down, and let simmer until chicken reaches an internal temperature of 165°F. Chicken will begin to shred.
- Serve with rice and enjoy!
