PINEAPPLE CHICKEN & ANDOUILLE SAUSAGE

YIELDS: 4 Servings PREP TIME: 15 mins COOK TIME: 20 mins TOTAL TIME: 35 mins

1 lb chicken breast or thighs
1 fresh pineapple - cut in small cubes (or canned)
1 yellow, green & red bell pepper - chopped
1 red onion - chopped
4 tbsp fresh grated ginger
1 tbsp saffron
1 lb andouille sausage (about 5 sausages)
Peanut oil
Tools 
Large skillet 
Instant read thermometer

  1. Heat a bit of peanut oil in a large skillet, then add the ginger and saffron. Stir and wait a few minutes to marry the oil, ginger and saffron.
  2. Add chicken, pineapple, and sausage, stir to mix.
  3. Cover, turn heat down, and let simmer until chicken reaches an internal temperature of 165°F.  Chicken will begin to shred.
  4. Serve with rice and enjoy!
