A bright, silky persimmon glaze and dipping sauce that balances the fruit’s natural sweetness with a hint of citrus and spice for a vibrant, versatile finish to both savory and sweet dishes.

PERSIMMON GLAZE & DIPPING SAUCE

Ingredients

  • 2 cups chopped fresh persimmons

  • 2 cups pineapple juice unsweetened (or orange juice alternative)

  • 2 cups light brown sugar

  • 1/4 cup apple cider vinegar

  • 1 cup Tamari or Soy sauce

  • 1 1/2 tbsp ginger puree

  • 1/4 green onions chopped

  • 1 tbsp avocado oil

Directions

  1. Heat up your sauce pan on medium heat with the Avocado oil and add the ginger, cooking until fragrant about 5 minutes.
  2. Add remaining ingredients and bring to simmer. Stir and continue cooking until mixture thickens up into a glaze, about 30 minutes.
  3. Puree the mixture with an immersion blender then strain it through a fine strainer to remove any large pieces.
  4. Use the glaze to baste the turkey, or serve as a dipping sauce.
