HONEY SESAME CHICKEN

This Honey-Sesame Chicken is simply the best. So flavorful and simple to make! Cooking it in the Instant Pot makes the chicken extra tender, but you can also do it in a slow cooker or on the stovetop.
INGREDIENTS:
1 ½ lbs boneless, skinless chicken breasts, cubed
½ cup soy sauce or coconut aminos
⅓ cup chicken stock (I used Better than Bouillon)
¼ cup honey
2 tbsp toasted sesame oil
2 tbsp sliced green onion, plus extra for garnish
1 tsp minced garlic
1 tsp minced ginger
1 tbsp toasted sesame seeds, plus extra for garnish
1 tbsp flour or cornstarch for thickening, if needed
5 cups cooked white rice, for serving

DIRECTIONS:
- Combine the chicken, soy sauce, chicken stock, honey, sesame oil, green onion, minced garlic, minced ginger, and sesame seeds in a large Ziploc bag and marinate in the refrigerator for at least 2 hours. (You can also freeze it at this point. Just allow it to thaw for 24 hours in the refrigerator before cooking.)
- After marinating, add the chicken with marinade to the Instant Pot.
- Cook on high pressure for 15 minutes then allow the pressure to naturally release. (Alternatively, you can cook the chicken in a slow cooker for 4-5 hours or a large pot on the stove.)
- Open and remove the chicken using a slotted spoon.
- To thicken the sauce, set Instant Pot to sauté mode and gradually whisk in the flour or cornstarch. Simmer for 4-5 minutes then return the chicken to the sauce and turn off Instant Pot.
- Serve the chicken over the cooked white rice and garnish with sliced green onion and toasted sesame seeds.
