This egg white frittata with feta cheese makes a quick and delicious breakfast or brunch. It’s packed with veggies, flavorful feta cheese (can also use goat cheese for a different flavor profile), and extra creaminess from the cottage cheese.
3 slices bacon, chopped
1 shallot, diced
½ cup cherry tomatoes, halved
1 cup baby spinach
10 egg whites
¼ cup cottage cheese
½ tsp salt
½ tsp pepper
2 tbsp feta cheese OR goat cheese
Cast iron skillet
Mixing bowl

Preheat oven to 400°F.
Cook the bacon in a cast iron skillet over medium heat for 3-4 minutes, until crisp.
Add the shallot and tomatoes to the skillet. Continue cooking until the tomatoes have softened. Toss in the spinach and cook for an additional minute.
While the veggies cook, whisk together the egg whites, cottage cheese, salt, and pepper in a medium bowl.
Remove the skillet from the heat and pour in the egg white mixture. Sprinkle the feta or goat cheese over the top and transfer to the preheated oven.
Bake for 20-25 minutes until the egg whites are firmly set.
Remove from the oven, allow to cool for about 10 minutes, slice, and serve.
