COCONUT RICE PUDDING WITH MANGO

Coconut rice pudding will be your new favorite dessert and it's super easy to make too! You will just love the flavors of the coconut and the added mango on top is the best ever!
INGREDIENTS:
1 qt 2% Milk
1 cup arborio rice
½ cup sugar
14 oz unsweetened coconut milk or lite coconut milk
1 fresh mango cut into small squares (or any fruit topping you like)

DIRECTIONS:
- In a saucepan, combine the milk, rice and sugar with 2 cups of water and bring to a boil. Simmer over medium heat, stirring frequently until the rice is tender and suspended in a thick creamy sauce, about 30 minutes. Stir in the coconut milk and simmer, stirring occasionally, until the rice is very tender and the liquid is thickened, about 10 minutes. Let cool slightly.
- Spoon the rice pudding into bowls, garnish with the fresh mango or your choice of toppings. Best served slightly warm.
