CAJUN STYLE SALMON WITH APPLE & ARTICHOKE SALAD

This Cajun Style Salmon with Apple & Artichoke Salad makes a healthy and satisfying lunch or dinner. The apple adds plenty of sweet crunch while the Cajun spice is a nice twist and adds a ton of flavor!
INGREDIENTS:
(2) 4 oz salmon filets
Juice of half a lemon
2 tbsp olive oil
Lemon wedges, for garnish
Rub
1 tsp sea salt
1 tsp freshly ground pepper
1 ½ tsp dried oregano
¾ tsp dried thyme
½ tsp chili powder
Salad
4 cups red leaf lettuce
½ cup thinly sliced radishes
½ cup diced apples
½ cup roughly chopped artichoke hearts
½ cup sliced red bell pepper
½ cup halved cherry tomatoes
½ cup sliced cremini mushrooms
Dressing
1 tsp Dijon mustard
3 tbsp olive oil
2 tbsp red wine vinegar
Juice of half a lemon
1 tsp minced shallots
½ tsp sea salt
½ tsp freshly ground black pepper

DIRECTIONS:
- Preheat oven to 375°F.
- In a small bowl, combine all ingredients for the rub and mix well.
- Place the salmon filets on a baking sheet and drizzle with the lemon juice and olive oil.
- Sprinkle the rub over the salmon filets and bake for 12-15 minutes, until cooked through.
- While the salmon bakes, combine all ingredients for the salad in a large bowl and toss to combine.
- For the dressing, whisk together all ingredients until emulsified.
- Toss the salad with the dressing and divide on to two plates.
- Top the salads with the salmon and garnish with lemon wedges. Enjoy!
