CAJUN STYLE SALMON WITH APPLE & ARTICHOKE SALAD

This Cajun Style Salmon with Apple & Artichoke Salad makes a healthy and satisfying lunch or dinner. The apple adds plenty of sweet crunch while the Cajun spice is a nice twist and adds a ton of flavor!

INGREDIENTS:

(2) 4 oz salmon filets 
Juice of half a lemon 
2 tbsp olive oil
Lemon wedges, for garnish

Rub
1 tsp sea salt 
1 tsp freshly ground pepper 
1 ½ tsp dried oregano
¾ tsp dried thyme 
½ tsp chili powder 

Salad 
4 cups red leaf lettuce 
½ cup thinly sliced radishes 
½ cup diced apples 
½ cup roughly chopped artichoke hearts 
½ cup sliced red bell pepper 
½ cup halved cherry tomatoes 
½ cup sliced cremini mushrooms

Dressing 
1 tsp Dijon mustard 
3 tbsp olive oil 
2 tbsp red wine vinegar 
Juice of half a lemon 
1 tsp minced shallots 
½ tsp sea salt 
½ tsp freshly ground black pepper

DIRECTIONS:

  1. Preheat oven to 375°F. 
  2. In a small bowl, combine all ingredients for the rub and mix well. 
  3. Place the salmon filets on a baking sheet and drizzle with the lemon juice and olive oil. 
  4. Sprinkle the rub over the salmon filets and bake for 12-15 minutes, until cooked through. 
  5. While the salmon bakes, combine all ingredients for the salad in a large bowl and toss to combine. 
  6. For the dressing, whisk together all ingredients until emulsified. 
  7. Toss the salad with the dressing and divide on to two plates. 
  8. Top the salads with the salmon and garnish with lemon wedges. Enjoy!
