CAJUN STYLE SALMON SALAD

1 salmon filet
Salt and pepper
Oregano
Thyme
Chili powder
Fresh lemon juice
Olive oil
Salad
Red leaf lettuce
Radishes
Artichoke hearts
Sliced bell pepper
Diced tomatoes
Sliced mushrooms
Fresh lemon wedges for serving
Dressing
1 tsp Dijon mustard
3 tbsp olive oil
2 tbsp red wine vinegar
½ lemon, juiced
Salt and pepper, to taste
1 tsp minced garlic
1 tsp minced shallots

  1. Preheat oven to 375°F.
  2. Drizzle your salmon filet generously with olive oil and a squeeze of lemon juice.
  3. Season to taste with a combination of salt, pepper, oregano, thyme, and chili powder.
  4. Bake for 12-15 minutes, until cooked through.
  5. In a small bowl, whisk together all of the ingredients for the salad dressing.
  6. Prepare your salad using the ingredients listed or whatever fresh veggies you have on hand.
  7. Place the salmon filet on top of the salad and drizzle with the dressing.
