CAJUN STYLE SALMON SALAD

This quick and delicious Cajun Style Salmon Salad makes a healthy lunch or dinner. The salad veggies are just a suggestion; use up whatever you've got in the fridge. The flavorful lemon-Dijon vinaigrette tastes great on everything!
INGREDIENTS:
Salmon
1 salmon filet
Salt and pepper
Oregano
Thyme
Chili powder
Fresh lemon juice
Olive oil
Salad
Red leaf lettuce
Radishes
Artichoke hearts
Sliced bell pepper
Diced tomatoes
Sliced mushrooms
Fresh lemon wedges for serving
Dressing
1 tsp Dijon mustard
3 tbsp olive oil
2 tbsp red wine vinegar
½ lemon, juiced
Salt and pepper, to taste
1 tsp minced garlic
1 tsp minced shallots

DIRECTIONS:
- Preheat oven to 375°F.
