BLACKENED MAHI MAHI WITH MANGO & ZUCCHINI

Simple, fresh, local ingredients for an easy homemade dinner! Blackened mahi mahi, fresh chopped mango tossed with a little chili garlic sauce, and zucchini sautéd in butter - so delicious! 


INGREDIENTS
4 fresh mahi mahi filets 
Big Haole’s Paia Spice Co All Purpose Blackened Seasoning (or your favorite blackening seasoning) 
Sesame oil 
2 cloves garlic, minced 
1 mango, diced 
Chili garlic sauce, to taste 
1-2 medium zucchini, cut into half moons 
1 tbsp butter 
Salt and pepper, to taste 
Lime wedges

Tools
Cutting board 
Knife 
Cast iron skillet 
Large non-stick skillet 
Small bowl 

DIRECTIONS:

  1. Peel and dice the mango, place in a small bowl, and toss with a bit of chili garlic sauce. Set aside until ready to serve. 
  2. Pat your mahi mahi filets dry with paper towels and rub with blackened seasoning. 
  3. Heat 1-2 tbsp sesame oil in a large cast iron pan over medium-high heat. 
  4. Once the oil is hot, add your mahi filets and cook for 3-4 minutes on each side. 
  5. Remove from the pan and cover with foil to keep warm. 
  6. Heat the butter in a large, non-stick pan over medium-high heat. 
  7. Add the zucchini and sauté for 4-6 minutes, until softened and lightly browned. 
  8. Top the mahi filets with a few spoonfuls of the mango mixture and serve the sautéd zucchini on the side. Garnish with a lime wedge and enjoy!
