THAI BEEF STEW

BEEF STEW

This Beef Stew recipe features chunks of beef braised in a rich, savory, Thai-style broth that includes curry paste and fish sauce. This warm and comforting stew is perfect for a chilly night and requires very little work thanks to the Instant Pot!
 
INGREDIENTS
1 tbsp olive oil 
2 lbs beef stew meat
1 medium onion, diced 
½ cup beef stock 
¼ cup Thai red curry paste 
2 tbsp fish sauce
9 cups fresh spinach 
1 handful sliced mushrooms 
8 oz French green beans 
Juice of 1 lime 
¾ cup coconut milk 
Am.Niccoli Signature Salt, for garnish 
Microgreens, for garnish 
Cilantro, for garnish 
Noodles or rice, for serving

DIRECTIONS:

  1. Heat the olive oil in a large skillet over medium-high heat. 
  2. Add the stew meat and cook until browned on all sides. 
  3. Transfer the meat to the Instant Pot along with the onion, beef stock, curry paste, and fish sauce. 
  4. Cover and cook on high pressure for 40 minutes.  (Alternatively, you can do this on the stovetop in a large pot by simmering the beef for 2-3 hours.)
  5. Release the pressure and add the spinach, mushrooms, green beans, lime juice, and coconut milk. 
  6. Turn the Instant Pot to sauté mode and simmer, with the lid off, until the green beans are cooked to your preferred tenderness (about 5-8 minutes). 
  7. Serve over noodles or rice and garnish with a handful of microgreens and a pinch of fresh cilantro.
