BACON MAC & CHEESE
My boy always requests this Bacon Mac & Cheese when he’s home - no boxed mac & cheese allowed in our house! Homemade mac is much easier to throw together than you think…and you can never go wrong with adding a little bacon!
INGREDIENTS:
1 box macaroni or noodle of your choosing (I usd ziti), cooked according to the package instructions
4 strips bacon, diced
Drizzle of olive oil
½ cup diced yellow onion
3 cloves garlic, minced
¼ cup flour
2 cups almond milk or half & half
1 ½ cups shredded cheddar cheese, divided
1 cup grated parmesan cheese

DIRECTIONS:
- Preheat oven to 350°F.
- Cook the bacon in a large skillet over medium-high heat until crispy.
- Remove from the pan and drain on paper towels.
- Heat a drizzle of olive oil in the same pan and cook the onions and garlic until translucent.
- Reduce heat to medium and whisk in the flour and almond milk.
- Continue whisking until the mixture begins to thicken.
- Reduce heat to low and whisk in 1 cup of the shredded cheddar and all of the grated parmesan.
- Add the cooked noodles and bacon to the cheese sauce and mix well.
- Transfer the mixture to a large baking dish and top with the remaining shredded cheddar.
- Bake for 25-30 minutes, until golden brown and bubbly.
