BACON MAC & CHEESE

My boy always requests this Bacon Mac & Cheese when he’s home - no boxed mac & cheese allowed in our house! Homemade mac is much easier to throw together than you think…and you can never go wrong with adding a little bacon! 


INGREDIENTS: 
1 box macaroni or noodle of your choosing (I usd ziti), cooked according to the package instructions 
4 strips bacon, diced 
Drizzle of olive oil 
½ cup diced yellow onion
3 cloves garlic, minced 
¼ cup flour 
2 cups almond milk or half & half
1 ½ cups shredded cheddar cheese, divided
1 cup grated parmesan cheese 

Tools
Cutting board 
Knife
Large skillet 
Large pot 
Large baking dish 

DIRECTIONS:

  1. Preheat oven to 350°F. 
  2. Cook the bacon in a large skillet over medium-high heat until crispy. 
  3. Remove from the pan and drain on paper towels. 
  4. Heat a drizzle of olive oil in the same pan and cook the onions and garlic until translucent. 
  5. Reduce heat to medium and whisk in the flour and almond milk. 
  6. Continue whisking until the mixture begins to thicken. 
  7. Reduce heat to low and whisk in 1 cup of the shredded cheddar and all of the grated parmesan. 
  8. Add the cooked noodles and bacon to the cheese sauce and mix well. 
  9. Transfer the mixture to a large baking dish and top with the remaining shredded cheddar. 
  10. Bake for 25-30 minutes, until golden brown and bubbly.
