AFRICAN DODO (CREAMED VEGETABLES)

A simple and flavorful Rwandan side dish. Dodo is from the amaranth family and only found in Africa, but give this a try with kale, chard or spinach - you're gonna love it!
INGREDIENTS:
½ lb kale, chard, spinach, or other hearty green
¼ cup butter
Salt and pepper
2 cloves garlic, minced
1 yellow onion, diced
¼ cup heavy cream
1 tsp maggi (crumbled bouillon cube)

Large skillet
DIRECTIONS:
- Bring a large pot of water to a boil and blanch the greens for 2 minutes.
- Strain, run under cold water, and roughly chop.
- Melt the butter with a pinch of salt in a large pan over medium heat. Add the garlic and onion and sauté until softened.
- Stir in the blanched greens, heavy cream, and maggi (crumbled bouillon). Simmer for 2-3 minutes.
- Serve and enjoy!
