Charred Octopus & Chimichurri

I was able to learn first hand from dad Jorge how simple cooking octopus can be. The finished BBQ charred dish is so tasty with that bit of char crunch on the octopus and chimichurri flavor!! It’s so worth trying out. Kids love it and tons of protein as well. Try something new!

Jorge was born on Margarita Island (yes, just like the drink lol). Isla de Margarita, is part of Venezuela and lies in the Caribbean Sea about 25 miles north of the mainland. It’s a popular holiday destination, comprising 2 peninsulas linked by the sand and mangroves of the Laguna de la Restinga national park. As a young boy, he was surrounded by fresh food from the sea and the land, learning how to cook from his large multi-cultural family. He ended up in the hotel business and worked as a concierge, which allowed him to experience first-hand how a world-class, trained chef prepares and presents their food.

​​Nowadays, he’s still an island boy at heart, living on the Hawaiian island of Maui with his wife and two daughters. He not only maintains a large herb garden adjacent to his home, he also runs an active farm in the upcountry of the Island, producing honey, chickens (and eggs), and a variety of local fruit and vegetables. He says it is his zen place to think, discover and be close to the soil.

Fun fact: In his youth, Jorge became fascinated by the circus and eventually learned how to juggle everything from fruit to flames and even chainsaws! His juggling days are clearly paying off as he juggles the expansion of his farm while harvesting and cooking crazy good food for his family!
