Tacos!!! Pulled Roasted Chicken…Yum! Gluten Free

If you like tacos you are going to love these… This is the simplest and easiest way to make them in a pinch… And your family will think you slaved over them for hours! Cooking time approx. 30 minutes


  • 1 Roasted Chicken (buy a lemon herb already cooked at the store)
  • 1 package of Corn Tortillas (gluten free)
  • ½ red onion
  • 1 red bell pepper (small)
  • 1 yellow bell pepper (small)
  • 1 packet of Lawry’s Taco seasoning mix (gluten free)
  • 1 cup of water
  • ½ cup vegetable oil
  • 2 Tbls of olive oil
  • 1 Sliced tomato (optional)
  • Grated cheddar cheese (optional)
  • Salsa (optional)
  • Tapatio Taco sauce (optional)


Corn Tortillas Prep: Do this first so your shells are ready in advance Get a large separate pan and put in on High Heat. Put in about 1 tbls of the vegetable oil and let it get hot and spread it around the pan. Put a couple of the corn tortillas in the pan and let it bubble up so its semi crispy Flip the tortillas over on to the other side and let that bubble up so its semi crispy too. Now take some tongs and fold them in half to form the shape of the taco. Make sure to flip them over so both sides are crispy. Put the cooked shells on a plate for later. Repeat to make more. (the hotter the oil the better) Chicken meat prep and cooking: Pull all the chicken off the bone and set aside Chop up your onion and put it in a large pan Chop up your peppers and put them in the pan with the onion Put the 2 tbls of olive oil in the pan with onion and peppers put it on medium heat (stirring occasionally so nothing burns) Add all the pulled chicken meat to the pan and stir

Take the Lawry’s Taco Seasoning pack and add in about ½ of it on top of everything and mix it up in the pan Add about ½ of the cup of water to the entire mix (this keeps everything moist) Let this cook for 10 minutes medium heat (stirring occasionally if it looks dry add more water) Add a little more of the Lawry’s and a little more water then stir and let it sit for 5-10 more minutes. Fill your shells with the meat and add your favorite optional ingredients (tomato, avocado, salsa, taco sauce) Serve it up!!
