Summer Beet, Peach, and Goat Cheese Salad - Dads That Cook

This vibrant salad with beets, peaches, and goat cheese makes a healthy and flavorful side dish perfect for a summer cookout!
Boil the beets for about 15-20 minutes, until tender. Drain and allow to cool. You should be able to easily peel them with your hands once cooled.
Slice the beets and peach and arrange on a serving platter.
In a small bowl, whisk together the olive oil and lemon juice. Season to taste with salt and pepper.
Drizzle the dressing over the beets and peaches. Top with fresh basil and goat cheese.
