Smoked Prime Rib - Dads That Cook

Prime rib roasted in the oven is pretty darn tasty. Prime rib cooked on the smoker is out of this world! This recipe couldn't be easier - rub it down with some seasonings, throw it on the smoker, and walk away!
Preheat smoker or grill to 230°F.
Prep your rib roast by generously seasoning it with rosemary, salt, pepper, cayenne pepper, paprika, and garlic powder.
Cook for about 3 1/2 hours, until an internal temperature of 125°F is reached (for med-rare). (Time will depend on the size of your roast - count on about 20-30 minutes per pound.)
Remove from the smoker and let rest for 15-20 minutes before slicing and serving.
