Roasted Zucchini | Dads That Cook

It doesn't get any easier than this roasted zucchini recipe! Simply seasoned and roasted to perfection - this makes a great side dish for just about any meal!

Preheat oven to 425°F.
Slice the zucchini very thinly using a mandolin or very sharp knife.
Lay the zucchini slices in a single layer on a large baking sheet and drizzle liberally with olive oil.
Season with salt, pepper, and oregano to taste.
Transfer to the preheated oven and roast for 10-12 minutes, until golden brown.
