Potato Salad with Bacon - Dads That Cook

My wifey's famous homemade potato salad with bacon! A great reason to use some fresh herbs from your garden. This is the only potato salad recipe you'll ever need, trust me!
Start by boiling the potatoes for 8-15 minutes, until fork tender.
Drain and allow to come to room temperature. (You can throw them in the fridge to speed the process up also.)
Mix the mayonnaise, Dijon mustard, chives, parsley, hard boiled egg, roasted onion, and most of the bacon (reserve a bit for garnishing) together in a large bowl. Season with salt and pepper.
Stir in the potatoes, adjust seasoning, if needed. Garnish with the reserved bacon and serve or refrigerate until ready to serve. Enjoy!
