Pineapple Chicken with Andouille Sausage is super simple to make but tastes amazing! The combination of all these ingredients makes you wanting more!

 1 lb chicken breast or thighs
 1 fresh pineapple - cut in small cubes (or canned)
 1 yellow, green & red bell pepper - chopped
 1 red onion - chopped
 4 tbsp fresh grated ginger
 1 tbsp saffron
 1 lb andouille sausage (about 5 sausages)
 peanut oil

Heat oil then add ginger and saffron. Stir and wait a few minutes to marry the oil, ginger and saffron

Add chicken, pineapple and sausage...stir to mix

Cover turn heat down and let simmer till chicken is cooked through @ 165 degrees internal temp. Chicken will begin to shred.

Serve with rice... Enjoy!
