GRILLED SCALLOPS WITH CHILI POWDER

Sometimes simple is best! These chili powder seasoned scallops are one of my favorites. Be sure to use the freshest scallops you can find!

INGREDIENTS:

12 fresh sea scallops
Salt and pepper, to taste
Chili powder, to taste
Canola oil spray

Tools 
Cutting board 
Knife
Large skillet

DIRECTIONS:

  1. Rinse your scallops and dry really well. Carefully remove the "foot" from each scallop.
  2. Spray your skillet or griddle with canola oil spray and heat over medium-high until very hot.
  3. Season the scallops with salt, pepper, and chili powder and place in the hot skillet.
  4. Cook for 1-2 minutes on each side, until golden brown. (Be sure not to overcook or they will become rubbery.)
  5. Serve immediately.
