Valentine’s Day Treat! Puff Ice Cream Sandwich with Strawberry Rhubarb Filling and Chocolate Dipping Sauce. Wifey very happy 😊!
Puff Pastry - I buy the frozen one - any brand is good - for us I get the Schar's Frozen Puff Pasty because it is gluten free
Follow the instructions on the puff pastry package AND be sure to thaw out for the time indicated BEFORE you lay it out flat - generally 3 hours. Use a heart shaped cookie cutter and cut out the pastry. Bake as instructed on the package. Set aside to cool.
3 cups strawberries
2 cups rhubarb cut in 1 inch or so pieces
1/3 cup orange juice - fresh squeezed if possible
3 Tbsp cornstarch
1/4 cup maple syrup
1/8 cup honey
Bring all ingredients to boil and simmer until rhubarb is soft (about 7-10 mins) - taste for sweetness. I purposely didn't use sugar but you can add a bit more maple syrup or honey if it needs it. Once you add the ice cream and chocolate sauce - you really don't need the filling to be extra sweet.
Let filling cool.
Vanilla ice cream or Cocowhip for a lighter frozen topping or make your own whip cream - any of these work!
Melt chocolate chips or bits - I used Scharffen Berger Semisweet Chunks but use any you like. I melt mine in a small metal dish over heated water or in a double boiler.
Use a pastry brush or knife to decorate your plate with the chocolate and a little of the filling. Then fill a ramekin with the rest of the chocolate sauce for dipping.
Take the heart puff and carefully slit the seam on the side and carefully spoon in a small amount of the filling. Place on the plate. Spoon on a small amount of the ice cream or whip cream.
Place another puff pastry on top and dust with powdered sugar. Add a strawberry or two on the side for decoration if you want. Enjoy!

Finished Pork Roast - that skin!!
It’s totally worth the effort it takes to prepare it. Man, this was good.
Bone in Pork Loin Roast
Brine first -
6 cups water
2 sheets Kombu (seaweed) got mine at Japanese store but I’ve seen it online
2 cups Bonito flakes (basically tuna that’s dried and flaked) again got mine at Japanese store but get online if the market doesn’t have
1/2 cup kosher salt
4 cups ice
1/4 cup honey
2 Tbsp cracked pepper
1 Tbsp rice wine vinegar
1 Pork Loin Roast - mine was 3 ribs about 3 lbs but you could do 3-5 lbs
In a large soup pot (big enough to hold pork) combine water and Kombu - let stand 15 mins until Kombu is softer - then cook over high heat about 8 mins. Remove from heat and stir in Bonita flakes. Let stand 15 mins. Use a strainer and throw away the solids. Keep all the liquid and add honey, black pepper and vinegar with ice. Stir until cooled and ice pretty much melted.
Add pork, cover and put in fridge for 12-24 hours. I like to leave it in for around 16-18 hrs.
Take it out of brine, pat down dry, put bone side down on roasting rack and put back in fridge uncovered for 4-12 hours.
Set oven or smoker to 250 degrees. Take pork out and get it to room temp - about 45 mins. Roast it til it hits 135 degrees internal temp - needs to cook for almost 2 hours.
Take it out. Let it rest before glazing. Turn oven or smoker up to 450 degrees.
2 Tbsp white miso (should be able to find this in the supermarket or Asian market if need be)
2 Tbsp honey
1 Tbsp rice wine vinegar
Stir together ingredients in small bowl and spread all over the top of the pork.
Return to 450 degree oven or smoker for about 10 mins. Let stand and rest 5 mins. Carve it up!! Eat!

Baked Mozzarella Chicken! Perfect Winter Pasta Casserole.
13 ounce or 2 cups Penne Pasta
2 cups Chicken - already cooked cut in strips or bite size
1 tsp Italian seasoning
Dash of Pepper and salt
1 Tbsp Olive oil
2 tsp garlic
Med Onion chopped
1 cup Fresh mushrooms chopped
Frozen thawed package or 3 cups fresh Spinach
2 cups Milk (your choice of full or skim or almond)
3 Tbsp flour to thicken
8 ounce or approx 1 cup Pesto
8 ounces or approx 1 cup Mozzarella - either grated or fresh Buffalo mozzarella pinched
Cook pasta just done - al dente. In skillet, cook onion and garlic in olive oil. Add cooked chicken, pepper, salt, seasoning, mushrooms, spinach, milk, and flour. Stir until thickened. Add pesto and pasta. Stir and then pour into casserole dish. Dot with mozzarella cheese. I used Buffalo mozzarella but you could use shredded.
If you want to make your own pesto...
3 cups basil leaves
3 tablespoons pine nuts
3 garlic cloves
1 teaspoon oregano
2/3 cup grated parmesan cheese
2/3 cup olive oil
salt and pepper to taste
Combine all pesto ingredients except for the olive oil in a food processor or blender. Blend until mixed and smooth. With the motor running, add olive oil in a slow stream until combined. Pesto should not be too soupy or fine.
Bake 375 degrees for 20 mins.

Simple Breakfast Healthy Treat! Apple Banana Muffins!!
Banana 🍌 is the sugar.
350 degrees - 30 mins - until toothpick comes out clean.
2 bananas mashed until creamy
Put in mixing bowl.
Add 2 eggs.
Add 1 grated apple - peeled
In separate bowl, stir...
2 cups almond flour
2 tsp cinnamon
1 tsp baking powder
1/2 tsp sea salt
Once it’s combined, add to the banana/apple mixture and stir it til well mixed.
Fill up muffin cups and bake - I like to use the paper muffin cups - make sure you let them cool for about 20-30 mins before you unwrap them! ...

Finished the Bisque!!
4 Tbsp butter - unsalted
Heat in large sauce pan or dutch oven - med heat. Add 1/2 cup chopped onion, 1 red pepper chopped, 2 stalks of celery chopped. Sauté or “sweat” til onion is soft.
Add few cloves of garlic, 1 bay leaf, 3/4 tsp or so of cayenne or creole seasoning. Pinch of black pepper. Stir for 1 min.
Add 4 cups chicken or seafood stock. Bring to boil, reduce to simmer for 15 mins.
Combine 3 Tbsp flour with 1/2 cup half and half - whisk til no lumps - then add mixture to bisque. Add another 1/2 cup half and half plus 1/4 cup white wine. Stir til thick and creamy 3-4 mins.
Reduce to low heat, add 1 lb fresh crab, cook for 2 mins or so.
Taste it, add pinch of salt if needed. Serve it. Eat it!

Chicken Pesto Pasta - improv recipe!
First, sautéed onion and garlic on low heat in olive oil. Added sliced mushrooms, spinach, roasted red peppers, canned tomatoes, chicken broth, pepper, salt, 2 Tbsp pesto di Basilico (Basil pesto) from Frantoi Cutrera brand.
Added leftover roasted chicken pulled from the carcass.
Finished with Asiago cheese!!
