BRUNCH is SERVED!
MOCHI PANCAKES with Strawberries and MACADAMIA NUTS!
1 egg
3⁄4 cup almond milk
1 tbsp maple syrup
2 tbsp melted coconut oil
½ cup all purpose flour
1 tsp vanilla extract
½ cup glutinous rice flour
1 tsp baking powder
½ tsp salt

In a large mixing bowl, mix dry ingredients together. Then add in wet ingredients and mix. Use nonstick on med high heat - wait to flip until you see the batter bubbling in the middle a little.

Made a little topping with @fage yogurt, squeezed OJ, honey and zest from OJ - just the Orange part - if u get the white inner peel it is bitter.

Frittata
6 Eggs
1 cup Spinach
3/4 cup chopped Mushroom
1/4 cup chopped Onion
Dash of Salt, Pepper, Italian Seasoning
1/3 cup OatZARELLA or Mozzarella or Feta
Spray skillet w Avocado Oil
390 degrees for 25 mins.

Made Local Maui EGGPLANT Teriyaki Style with crushed MACADAMIA NUTS!!

Got these beautiful Japanese Eggplants at the local stand and used the Wok - med high heat.

Put in a little Sesame oil
chopped Maui 🧅 onion, then Sautéed w chopped fresh ginger and 1/3 c Coconut aminos.

Sautéed for a few mins and then added 1/3 c water and covered for 10 mins. Stirred and added a little cracked pepper. Would have added hoisin but no where to be found. Sautéed a bit longer and stirring - checking w a fork to make sure it was tender. Added 1 tsp local raw honey and tossed. Served with
Crushed macadamia nuts on top!

Delicious - according to me and the wifey 🙂.

HOT off my GRILL! FRESH FISH - ONO (rubbed w little sesame oil and salt/pepper w touch of cayenne) and AHI - (rubbed w mix of Kona Coffee, sugar, salt, chilies, onion powder, lime, grated chocolate, cayenne and paprika - sprayed a little avocado oil on the grill) Finished w a little Sprinkling Yuzu Furikake!! OH YEAH!

ONO from best place in town @southmauifishcompany - Captain Hunter is out on the water securing fish on a daily basis!! He’s the master!

Have You Made Butter Chicken 🐔?? This One Has a Twist! Most traditional Butter Chicken recipes use butter (I know, crazy?!), evaporated milk, half and half or heavy whipping cream at the end to thicken the sauce and make it really rich. I avoided that step and thickened the dish with Cashew Butter - saw Jaime Oliver do it so why not?!

Mine isn’t the reddish orange color as some traditional recipes since it didn’t have a lot of tomato sauce or red chili powder, but who cares? The flavors were awesome! Be creative and make it your own.

Recipe:
I used a whole chicken cut up because it’s what I had and we like the white and dark meat combo, but you could use skinless boneless chicken 🐓 breasts for a faster meal.

I cut up my whole chicken and then put it in the smoker first just for a bit - didn’t quite cook it all the way through - to add a smokiness to it, but you could also just marinate your raw skinless breasts with the yogurt marinade a few hours or overnight before starting the process. Either way is gonna be good.

Ingredients:
3-4 pieces of chicken
3-4 chili peppers - I like to mix a hot one with not so hot - I used an Anaheim with a Tabasco chili.
Basket of cherry tomatoes
4 cloves of garlic
Piece of ginger
1 Tbl garam masala spice
4 Tbl Greek yogurt
olive oil
2 Tbl cashew butter

Cut open the chilies and get rid of the seeds. Put in skillet on a high heat with the tomatoes and blacken all over - without burning. Remove and put in bowl.

Next, peel the garlic and ginger, and finely grate into a large bowl. Add most of the garam masala, a pinch of sea salt and black pepper and 1 tablespoon of yogurt. Rub over the chicken.

Return the pan to a medium heat with ½ a tablespoon of olive oil and add the chicken. If you’ve smoked the chicken already, cook for about 5-10 minutes. If using raw breasts, cook til basically done.

Remove the tomato skins and roughly chop the chilies, to taste. Add chicken to the tomatoes and chopped chili peppers 🌶 and add the cashew butter. Pour in 3/4 cup boiling water and stir. Once it starts to thicken, return the chicken to the stove for a couple mins to heat thru. Drizzle in the remaining yogurt, slice, serve!!

Carrot CAKE for Easter! SO tasty and good for the bod too - you’ll see what I mean...

Recipe:
1½ cups milk - I used almond
6 large pitted whole dates, chopped
¾ cup raisins, divided
½ cup sliced ripe banana
1 teaspoon pure vanilla extract
1¾ cups regular rolled oats
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon ground nutmeg
Pinch of ground cloves
1½ cups finely shredded carrots
Handful chopped walnuts - depending on how much you like nuts - I used some on top too.
350 for the oven preheated and use about a 8x8 square pan. I like using parchment paper so it won’t stick and then I have less mess too!

Combine the milk, dates, ¼ cup of the raisins, the banana, and vanilla in a medium bowl. Let stand for 15 minutes or until dates are softened.

Place the oats in a blender or nutribullet. Cover and blend until a powder forms. Don’t blend too long. Transfer to a large bowl. Stir in the baking powder, cinnamon, baking soda, nutmeg, and cloves.

Transfer the date mixture to the blender. Cover and blend until smooth. Add the date mixture to the oat mixture in bowl; stir just until combined. Don’t use a beater - just hand stir so the batter doesn’t toughen up. Fold in the remaining ½ cup of raisins, the carrots, and walnuts.

Spread the batter into the prepared baking pan. Bake for 40 to 45 minutes or until browned. Cool in the pan for 10 minutes. Remove from the pan; cool on a wire rack.

Topping:
I used a combo of dates, cashews, vanilla and cream cheese. You can use a dairy free or fat free cream cheese. I like the Miyoko’s brand because it’s dairy free.

6 dates, chopped
¾ cup unsalted raw cashews
Seeds from 1 vanilla bean (or 1 teaspoon pure vanilla extract)

Combine the dates, cashews, and vanilla in a blender. Add just enough water to cover the mixture. Let stand for 45 minutes or until dates and cashews are softened. Cover and blend until smooth, adding water if it’s too stiff to easily blend. Remove it from blender and add cream cheese - use hand mixer to beat in cream cheese until smooth. Spread on cooled cake. Of course you could always just use powdered sugar if you are in a hurry lol.

Here is the Char Siu Pork I made today - Cooked it in my smoker but next time I will use the oven and get the top red skin a little crispier but man the flavor was SO AMAZING. The marinade and basting really kicked it into gear and it was INCREDIBLY TASTY.

I tried just a little sample before driving it over to our friend's house and reluctantly handing it over - just kidding. They were very touched. Always good to make someone feel good with food ;)

Peking Chicken is Almost Done! Now for the Char Siu Pork!!! Man - might be hard to give this to our friend lol - but I’m not the one who had surgery! Recipe...

Dust inside of whole chicken with 1/2 tsp Five Spice Powder then Marinade whole chicken overnight in
1/4 c light soy sauce
2 Tbl dark soy sauce
1 Tbl sugar
5-6 slices ginger
1 tsp Five Spice Powder

Remove chicken from fridge and let sit for 30 mins before grilling. Remove ginger from marinade and stuff inside chicken. Use a tray with a rack. Keep your marinade and add 2 Tbl of honey or high quality molasses and bring to boil for two mins.

In oven or smoker - preheat to 350 degrees. Once it’s at temp, put chicken on rack in and then baste after 20 mins. After an hour from when it was put in - Go ahead and baste every 10-15 mins and use up the marinade with basting.

Remove at 165 degrees - about 1 hour and 30 mins. Rest for 15 mins.

Cut up and serve w rice and ginger scallion sauce - Mix together: 5 stalks green onions - finely chopped, 6 slices ginger - finely chopped, 1/2 tsp salt and then set aside. Heat up 7 Tbl peanut oil until smoking and pour over scallion mixture. Mix and done!

Chocolate??! These are Dates with Cocoa Powder Truffles with a little kick!!

1 cup Dates - soak for 15 mins
1/2 cup unsweetened cocoa powder
1 1/2 tsp vanilla
1/4 tsp sea salt
1/2 tsp cinnamon
1/8 tsp cayenne

To roll in for coating - a mix of:
1/4 cup cocoa powder - unsweetened
1/4 cup turbinado raw sugar

After soaking dates in hot water for 15 mins, drain and dry.

In food processor- pulse dates to make a paste and add all other ingredients (except coating). Pulse til forms a ball.

Transfer to a bowl and roll small balls - about a tsp of the date mixture. Roll in coating mixture. Put in fridge for 20 mins or until ready to serve and eat. If it’s too sticky when u roll it into balls, put in fridge and then roll it in the coating. Yum!!

Valentine’s Day Treat! Puff Ice Cream Sandwich with Strawberry Rhubarb Filling and Chocolate Dipping Sauce. Wifey very happy 😊!

Recipe...
Puff Pastry - I buy the frozen one - any brand is good - for us I get the Schar's Frozen Puff Pasty because it is gluten free

Follow the instructions on the puff pastry package AND be sure to thaw out for the time indicated BEFORE you lay it out flat - generally 3 hours. Use a heart shaped cookie cutter and cut out the pastry. Bake as instructed on the package. Set aside to cool.

Filling:
3 cups strawberries
2 cups rhubarb cut in 1 inch or so pieces
1/3 cup orange juice - fresh squeezed if possible
3 Tbsp cornstarch
1/4 cup maple syrup
1/8 cup honey
Bring all ingredients to boil and simmer until rhubarb is soft (about 7-10 mins) - taste for sweetness. I purposely didn't use sugar but you can add a bit more maple syrup or honey if it needs it. Once you add the ice cream and chocolate sauce - you really don't need the filling to be extra sweet.

Let filling cool.

Vanilla ice cream or Cocowhip for a lighter frozen topping or make your own whip cream - any of these work!

Melt chocolate chips or bits - I used Scharffen Berger Semisweet Chunks but use any you like. I melt mine in a small metal dish over heated water or in a double boiler.

To assemble:
Use a pastry brush or knife to decorate your plate with the chocolate and a little of the filling. Then fill a ramekin with the rest of the chocolate sauce for dipping.

Take the heart puff and carefully slit the seam on the side and carefully spoon in a small amount of the filling. Place on the plate. Spoon on a small amount of the ice cream or whip cream.

Place another puff pastry on top and dust with powdered sugar. Add a strawberry or two on the side for decoration if you want. Enjoy!

Finished Pork Roast - that skin!!

It’s totally worth the effort it takes to prepare it. Man, this was good.

Recipe...
Bone in Pork Loin Roast

Brine first -
6 cups water
2 sheets Kombu (seaweed) got mine at Japanese store but I’ve seen it online
2 cups Bonito flakes (basically tuna that’s dried and flaked) again got mine at Japanese store but get online if the market doesn’t have
1/2 cup kosher salt
4 cups ice
1/4 cup honey
2 Tbsp cracked pepper
1 Tbsp rice wine vinegar
1 Pork Loin Roast - mine was 3 ribs about 3 lbs but you could do 3-5 lbs

In a large soup pot (big enough to hold pork) combine water and Kombu - let stand 15 mins until Kombu is softer - then cook over high heat about 8 mins. Remove from heat and stir in Bonita flakes. Let stand 15 mins. Use a strainer and throw away the solids. Keep all the liquid and add honey, black pepper and vinegar with ice. Stir until cooled and ice pretty much melted.

Add pork, cover and put in fridge for 12-24 hours. I like to leave it in for around 16-18 hrs.

Take it out of brine, pat down dry, put bone side down on roasting rack and put back in fridge uncovered for 4-12 hours.

Set oven or smoker to 250 degrees. Take pork out and get it to room temp - about 45 mins. Roast it til it hits 135 degrees internal temp - needs to cook for almost 2 hours.

Take it out. Let it rest before glazing. Turn oven or smoker up to 450 degrees.

Glaze-
2 Tbsp white miso (should be able to find this in the supermarket or Asian market if need be)
2 Tbsp honey
1 Tbsp rice wine vinegar

Stir together ingredients in small bowl and spread all over the top of the pork.

Return to 450 degree oven or smoker for about 10 mins. Let stand and rest 5 mins. Carve it up!! Eat!
