The kids are finally back at school, so that means we finally have our mornings and afternoons back. We can start making plans and getting work done, but we still need easy dinner ideas. Don’t fret about getting it all done when you can make easy family dinners with little effort — thanks to your crockpot. With the crockpot, you put everything in first thing in the morning and let it cook all day. It’s no fuss and the slow cooking seals in the flavor and moisture.
Crockpot Roast and Vegetables
This is a classic crockpot recipe which we enjoy on a regular basis. Chop up some onions, potatoes, carrots and any other vegetable that you love and throw them in the crockpot. Pour enough water to fill the crockpot about 1/3 of the way. It doesn’t matter if the roast is beef or pork, all that matters is that it fits. Rub some spices into the roast and sprinkle some into the water. (I like to use garlic, seasoning salt and pepper.) Put the crockpot on low and let it cook for 8-10 hours. The spices soak into the meat and the vegetables. Take out the roast, cut it up and serve with the vegetables. I usually do all this with the eyeball method of measurement.
Crockpot Lasagna Soup
Who doesn’t love lasagna, but there’s a lot of prep time. This recipe serves a family of six and takes no time. You need a pound of ground beef, 3 cups of beef or vegetable broth, 5 garlic cloves, one can of diced tomatoes, one can of tomato paste, 1 cup of V8, and 2 cups of shell pasta. Put the can of tomatoes and the tomato paste into the crockpot and mix. Add the beef, broth, garlic, and a little salt and pepper to taste. Cook on low for approximately 8 hours, but 30 minutes before it is done add the pasta and 1 cup of water. Serve with some fresh parmesan. Everyone will love it.
Crockpot Honey Garlic Meatballs
It’s balls of meat. How can you not love it? You just need ¼ cup of brown sugar, 1/3 cup of honey, ½ cup of tomato ketchup, 2 tablespoons of soy sauce, 2 cloves of minced garlic, one bag of frozen meatballs. We start with the sauce. Get a bowl and mix the brown sugar, honey, ketchup, soy sauce and garlic. Put the frozen (not thawed) meatballs into the crockpot and pour in the sauce mix. Cook for about 4-6 hours, stirring occasionally.
