Thanksgiving is one of those holidays everyone loves because of family fun, but we get tired of the leftovers. That is unless dad cooks the leftovers into some mouthwatering dishes. Turkey and Stuffing Snacks
The great thing about leftovers is they are already cooked, so you just have to heat them up. Grease a muffin pan and fill each hole with biscuit dough. Make sure to spread the dough so it covers the sides. Place in some stuffing, turkey and gravy and a little sharp cheddar cheese. Fold the dough around until the biscuits are closed. It will look like a ball of dough, but with goodies hidden inside. Place the tin in the oven and cook the biscuits as directed. The turkey and stuffing will heat up and the biscuits become the perfect snack.
Buffalo Turkey Tacos
Let’s start with the buffalo sauce. In a saucepan, melt 1 ½ cups of butter over medium heat. Add hot sauce and mix well until you get the flavor and heat that you like. Take out the leftover turkey, shred it, add it to the sauce and cover the turkey thoroughly. Place the buffalo turkey onto soft taco shells and cook in the microwave for a couple minutes. Add cheese, tomatoes, etc. and you have delicious leftover buffalo tacos.
Turkey Chili with Beans
Nothing warms you up like chili. In a sauce pan, heat 1 tablespoon of oil over medium heat. Add a chopped onion, chopped Poblano pepper and cook until soft. Add two teaspoons of ground cumin and stir. Add a can of diced tomatoes(drained), one can of kidney beans (drained), two cups of water, 1 ¼ teaspoons of salt and bring to a boil. Reduce the heat and stir until thickened. Add 2 cups of shredded leftover turkey and stir until well heated. Now you’re ready to take on winter.
