A simple easy Spanish Paella recipe that my good friend Matt O'Haren teaches us how to make! Super Tasty and fun for the family...

  • Yields: 6-8 servings



Tomatoes - Fine Chop

Onions - Rough Chop

Garlic - Crushed or Pressed

Peppers - Sliced in Strips

Chicken Breast - Cubed in small pieces


1. Heat your Pan on medium heat and Pour some Olive Oil into it

2. Add Onions and cook until Onions get golden then add Tomatoes, Garlic

3. Make a circle with the Tomato/Onions in the center of the pan, add a little more Olive oil and then add Arborio Rice (stir rice to coat with olive oil)

4. Once the rice gets Golden mix the tomato/onions together, add about 3/4 of Chicken broth in the pan

5. Sprinkle some Saffron and Add Bay leaves (bring pan to a boil/strong simmer)

6. Add the Frozen Peas and Chicken at the same time then add more Chicken broth

7. Add Red Pepper strips and put them on the top (continue cooking)

8. Add Shrimps (add a little more broth or water)

9. Add the Mussels place them evenly around the pan, when mussels open up you know they are done

10. Cover with Tin Foil and set aside for about 10 minutes (this helps continue the cooking and cools the dish down)

11. Serve it and Enjoy with your family!!

1/2 lb Chicken Breast (cut into small cubes)

32 Oz Chicken Stock

8-16 Oz Frozen Peas

2 cups Arborio Rice

8-16 Large Shrimp (cleaned)

10-12 Mussels

2 Lemons

2 tsp Smoked Paprika

2 Cloves Garlic (crushed)

2 tsp Saffron

1 Red Pepper (cut into strips)

3 Bay Leaves

2 Tomatoes (fine chopped)

1 Onion (rough chop)
