Melt about 1 tbsp butter in one of the pans then add the mushrooms and let them cook.

Take another pan throw a little bit butter and add the onions and lightly brown them. Add risotto to the pan (couples of cups) stir around so the onion and butter evenly coat the rissotto for a few minutes. Pour the white wine into the pan and stir. When the risotto gets little complacent, throw some of chicken broth in it. (continually stirring so it doesn't burn)

Cook it for about 15-20 minutes (continually stirring), then add the remainder of the chicken broth. Once broth reduces, add the parmesan cheese and roasted mushrooms and stir together.

Parmesan Cheese

1 Yellow Onion

1 lb Crimini Mushrooms

1 cup Dry White wine (Chablis)

16 Oz Chicken Broth

2 Tbsp Butter
