Cinnamon Spiced Pear Tart with Flaky Gluten Free Crust

Preheat your oven to 400*

In a large bowl combine all the ingredients and mix with a large spoon until completely mixed

Spray your Tart pan with the Canola Spray - this helps with sticking to the pan

Take one of the pastry sheets and gently fill the pan making sure it comes all the way up the edge

Fill the pastry with your Pear mixture evenly placing them

Cover with the second pastry sheet carefully around the edge, press down lightly on the top of the pastry to evenly distribute the filling

Pull off the excess dough around the edges

Use a fork to make small vent holes

Place the Tart under a cookie sheet and put in the oven for 40 Minutes to bake

Melt 2Tbs for butter in a Pyrex and coat the top of the pastry with a brush then bake for another 15 Minutes

Pull the Tart out and let sit for 10 - 15 minutes

Server with whip cream or ice cream!



2 sheets frozen flaky pastry sheets (Lead Betters, French Picnic Gluten Free) thawed

4 Tbsp unsalted butter - room temperature

1/4 cup granulated suger

5 firm ripe Bartlett pears, peeled, halved and cored

1/2 cup light brown sugar

2 Tbsp finely chopped crystallized ginger

1/2 tsp ground cinnamon

1/4 tsp pumpkin pie spice

1 Tbsp fresh lemon juice

Canola Spray ( for the tart pan )
